Local Cucumber & Tomato Salad

Instructions

A simple summer salad that’s the perfect side for grilled meats and seafood.

Toss all ingredients in a bowl, adjusting salt and pepper to taste. Serves 8-10 people.

Ingredients

  • 2 cups chopped cucumbers – medium to large dice
  • 2 cups chopped tomatoes – medium to large dice
  • 1 cup thinly-shaved red onion
  • 3/4 cup chopped fresh dill
  • 3 Tablespoons cider vinegar
  • 6 Tablespoons Olive Oil
  • Salt & Pepper to taste
