Broccoli & Cauliflower Salad
Instructions
Combine broccoli, cauliflower, bell pepper and onion in a serving bowl.
In a small bowl, whisk dressing ingredients and pour over salad.
Do not stir after dressing is poured over the salad.
Cover and refrigerate for at least 1 hour or overnight.
Toss the salad just before serving.
Ingredients
5 cups broccoli florets
4 cups cauliflower florets
1 medium bell pepper, sliced
1 medium red onion, chopped
Dressing
1/2 cup light mayonnaise
1/4 cup canola oil
1/3 cup Splenda or low-calorie sweetener
1/3 cup cider vinegar
1 teaspoon ground dry mustard 1/4 tsp salt
1/2 teaspoon ground black pepper
