Broccoli & Cauliflower Salad

Instructions

  1. Combine broccoli, cauliflower, bell pepper and onion in a serving bowl.
  2. In a small bowl, whisk dressing ingredients and pour over salad.
  3. Do not stir after dressing is poured over the salad.
  4. Cover and refrigerate for at least 1 hour or overnight.
  5. Toss the salad just before serving.

Ingredients

  • 5 cups broccoli florets
  • 4 cups cauliflower florets
  • 1 medium bell pepper, sliced
  • 1 medium red onion, chopped

Dressing

  • 1/2 cup light mayonnaise
  • 1/4 cup canola oil
  • 1/3 cup Splenda or low-calorie sweetener
  • 1/3 cup cider vinegar
  • 1 teaspoon ground dry mustard 1/4 tsp salt
  • 1/2 teaspoon ground black pepper
