Brunswick Stew

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Add onion and green pepper and sauteĢ for 3-5 minutes until tender.
  2. Add diced chicken to skillet and cook on medium heat until chicken is cooked through.
  3. Transfer mixture into a large saucepan. Add all remaining ingredients.
  4. Bring stew to a boil.
  5. Reduce heat to medium-low. Cover simmer for 30 minutes. Stirring occasionally.

  • 1 tablespoon vegetable oil
  • 1 yellow onion, diced
  • 1 green bell pepper, diced
  • 2 cups diced chicken breast
  • 2 1/2 cups low sodium chicken broth
  • 1 cup water
  • 1 can no salt added diced tomatoes
  • 1 1/4 cups frozen lima beans
  • 1 1/4 cups frozen whole kernel corn
  • 1 1/2 cups frozen baby cut okra
  • 1 teaspoon oregano
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
