Easy Roasted Bok Choy

Instructions

  1. Preheat oven to 400F.
  2. Slice bok choy in half lengthwise. Place sliced bok choy (face side up) on a baking dish or sheet pan.
  3. In a small bowl, whisk together the minced garlic, sesame oil, low-sodium soy sauce, vinegar, maple syrup or honey, and ground ginger.
  4. Brush the sauce mixture over top of the bok choy -try to get it into all the little nooks and crannies! Season with black pepper.
  5. Place the bok choy in the oven for about 12 minutes, or until lightly browned and tender. Cooking time will depend on the size and thickness of the vegetable.
  6. Remove from oven and garnish with green onion and sesame seeds if desired.

  • 1 pound, bok choy
  • 2 large garlic cloves, minced
  • 2 Tablespoons sesame oil
  • 1 Tablespoon low-sodium soy sauce
  • 1 Tablespoon vinegar
  • 2 teaspoons honey or maple syrup
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • Option to garnish with green onion or sesame seeds
