Jerk Chicken with Roasted Vegtables

Instructions

  1. Mix olive oil, garlic, thyme, and jerk marinade. Marinate chicken for at least 1 hour.
  2. Preheat oven to 400°F (200°C). Toss carrots, potatoes, cabbage, and mushrooms with olive oil, salt, and pepper. Roast for 25 minutes.
  3. Heat a grill or skillet over medium heat. Cook chicken for 5-6 minutes per side until fully cooked. Center should be cooked to at least 165°F.
  4. In the last few minutes of cooking, add bell pepper and onion to the pan with the chicken, sautéing until softened.
  5. Serve the chicken over the roasted vegetables.

  • 2 Chicken Thighs
  • 2 Tbsp Olive Oil
  • 2 Cloves Garlic, Minced
  • 1 tsp Thyme
  • 2 Tbsp Soca® Jerk Marinade(or any jerk marinade)
  • 2 Carrots, Chopped
  • 2 Potatoes, Cubed
  • 1 cup Cabbage, Chopped
  • 1 cup Mushrooms, Sliced
  • 1 Bell Pepper, Sliced
  • 1 Onion, Sliced
  • Salt & Pepper to Taste
