Jerk Chicken with Roasted Vegtables
Instructions
Mix olive oil, garlic, thyme, and jerk marinade. Marinate chicken for at least 1 hour.
Preheat oven to 400°F (200°C). Toss carrots, potatoes, cabbage, and mushrooms with olive oil, salt, and pepper. Roast for 25 minutes.
Heat a grill or skillet over medium heat. Cook chicken for 5-6 minutes per side until fully cooked. Center should be cooked to at least 165°F.
In the last few minutes of cooking, add bell pepper and onion to the pan with the chicken, sautéing until softened.
Serve the chicken over the roasted vegetables.

2 Chicken Thighs
2 Tbsp Olive Oil
2 Cloves Garlic, Minced
1 tsp Thyme
2 Tbsp Soca® Jerk Marinade(or any jerk marinade)
2 Carrots, Chopped
2 Potatoes, Cubed
1 cup Cabbage, Chopped
1 cup Mushrooms, Sliced
1 Bell Pepper, Sliced
1 Onion, Sliced
Salt & Pepper to Taste
