Oven Roasted Vegetables
Instructions
Preheat oven to 450 degrees F.
Coat a large casserole dish with cooking spray.
In a large mixing bowl, combine all vegetables. Toss with olive oil, salt, and black pepper.
Pour vegetables on a baking sheet.
Roast for 15 minutes, stirring occasionally until the vegetables are lightly browned and tender.

Add extra flavor with herbs and spices such as basil, oregano, thyme, sage, onion powder or garlic powder.

1 yellow squash, chopped
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 pound asparagus, chopped
1 red onion, chopped
2 Tablespoons olive oil
1/4 teaspoon salt
1 teaspoon ground black pepper
