Oven Roasted Vegetables


  1. Preheat oven to 450 degrees F.
  2. Coat a large casserole dish with cooking spray.
  3. In a large mixing bowl, combine all vegetables. Toss with olive oil, salt, and black pepper.
  4. Pour vegetables on a baking sheet.
  5. Roast for 15 minutes, stirring occasionally until the vegetables are lightly browned and tender.

  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 pound asparagus, chopped
  • 1 red onion, chopped
  • 2 Tablespoons olive oil
  • 1/4 teaspoon salt
  • 1 teaspoon ground black pepper
